From the design perspective, the default form submission notification emails don’t appear to be customizable on the form itself nor from the workflow. That said, I’d suggest upvoting and commenting on this existing feature request here: Customize Form Submission Notification Email
In the meantime, also tagging in some of our Top Contributors to see if they’ve found a workaround for this.
