I want to build a report, that shows all my deals, broken down into their deal stages over time and how they develop.
Problem is, I don’t know which property I have to put on the x-Axis.
I don’t want the property Date of last Deal Stage Movement - I want the total of deals that are at a specific week in their respective deal stage and want to see the total deals in the next week, again broken down into their deal stage.

If you want to see your pipeline development over time, that’s not possible in the custom report builder. Custom reports will always show the current status of records – so no going back in time or visualizing the state of records from a week ago, for example.
There is however default reports, ‘Historical snapshots’ and ‘Deal change history’, in the sales collections: Create sales reports in the sales analytics suite
These are great out-ouf-the-box reports that show you the pipeline now and before, broken down by your chosen interval.

you can use the Deal change history report. This report tracks changes made to the deals’ stages, amounts, and close dates. It also shows the deals that were created, allowing you to see the total deals in a specific week in their respective deal stage and observe how they develop over time : Create sales reports in the sales analytics suite
