Hi - I have inherited a few contacts in Hubspot where the email address is incorrect.
How can I go to the Contact record and update it?

I think you can do the following:
On the left hand menu, click on CRM → Contacts, once there, search for the contact that you need to update the email for. When you find it you can click on it and it’ll take you to the contact record.
Once in there, click on Actions (right above the contact’s name) → View all properties. Then search for ‘email’, you will see it under ‘Contact Information’. Finally, if you hover over the email, you will see the pencil icon that you can click on to edit the email.

First, you would open the contact record, then simply click into the Email field in the left sidebar to update it:
If you’re not seeing the field there, you’ll find it under View all properties:
