How do I add drop-down categories for a column in the Contacts page. For example, I would like add some customized drop-down categories to select from in the “Lead Status” column. Thank you!

Are you referring to the contact index page (Menu > Contacts > Contacts)?
If so, you should see a button to edit the columns in the top right corner:
If you want to add something that’s not in the list of properties, you would have to create a custom property first: Create and edit properties
