How do I disable the ability for my team to prelog a meeting for a future date?

At this point, you cannot. As far as I know, there aren’t any dedicated permissions or settings for this.

Thanks so much. Help me with this: my team will schedule a follow up meeting and it will auto populate. Should they be scheduling a follow up meeting as a task?

I think it would depend on how your team defines a “meeting” versus a “task.”
If the follow-up contains a confirmed date + time with the customer (e.g. “Hey let’s talk again by July 30 at 1 PM”). I would generally log it as a meeting since it would represent an actual scheduled interaction and would keep the engagement timeline accurate.
If the follow-up is simply an internal reminder to arrange or confirm the next meeting. I would create it as a task instead (e.g. Conduct a follow up with Customer X who might require another in-depth discussion for this business idea).
Tasks are generally better suited for reminders and action items. While meetings represent engagements that are expected to occur.
The important part in all of this is having a consistent process across the team so reporting and activity history remain reliable.

@MarissaDreem are the scheduling the meeting as a placeholder / reminder or as an actual meeting that will most likely take place? In the second case, yes, it should be a meeting. If it’s the former, then tasks should be used.
