I want to add Google sheets to my worklow. I’ve verified it is a connected app but when I select to add it in my worklflow, it does not appear as an option.

Just to confirm, are you seeing Google Sheets as a workflow action but there aren’t any options or does it not show up at all?
If I recall recorrectly, issues can arise if the Google Sheets account was connected for a Google Workspace that you don’t have access to.
You can reach out to HubSpot technical support to confirm – either find out who installed the integration in the first place and check with them or troubleshoot what’s going on.
