How can I set up default tasks or sub-stages within each pipeline stage?

I believe Salesforce has a concept of sub-stages, within a stage. So I might have MQL, then 4 things that need to be verified or done before the MQL is moved to SQL.
How is that handled in Hubspot?

HubSpot does not have an equivalent to this concept. For deals, it’s possible to customize the deal properties presented to users when a deal moves to a specific stage (and make them required in a Professional or Enterprise subscription).

For contacts and the lifecycle stage (such as MQL), there isn’t such a feature. HubSpot doesn’t block users from moving a contact along through lifecycle stages but there are features to designate to dos:

Neither of the two can block progress however.

That proposed feature might have some broad usefulness, but not particularly tied to what I’m looking for.
Interested in finesse particularly in the Deal Stages, Sales Pipeline funnel. They are steps in between key gates, but dont’ need to necessarily be a stage all their own, as it might blow up to too many stages. Example:
Stage: MQL
Step/Substage 1
Step 2
Step 3
Stage: SQL
It’s like moneyball. Sure, you can just look at every batter’s performance in batting average, but Moneyball breaks down every hit to every part of the field, type of hit, outcome, etc. And with that data, they can BETTER predict future outcomes. If we had more detail in the Pipeline stages, maybe “collected BANT questions”, “Asked for likely hood to buy and recorded rating”, etc, then we could build better forecasts and learn more about sales cycles and bottlenecks.
