I run a report with my accounts and I sort by last activity to know who to reach out to first. However currently, any future meetings (that show up when I click on the individual account) don’t register as last activity. Is there a way to make meetings show up as activity so if I schedule a meeting on the 1st of the month for the 15th, the last activity date would be the 15th?

Could you update your report to include “next activity date” = “unknown”?
This would remove any contacts who have an activity scheduled. You can refine to to a date range if you have long term activity planned and need to isolate it down to within the month.
