Our finance team has come to me with the following question: Are we able to freeze data entry by sales for a certain period of time? We need to be able to have a “snapshot” view of all deal properties once a month. From my understanding, HubSpot doesn’t allow this, right? As it’s supposed to provide real time data.

You’re correct, it’s not possible to easily access this information in a report. You need to either find a third-party solution which offers this (I’m not aware of any) or run exports.
The best way to achieve this, in my opinion, would be a manual monthly export, including all deal properties: Export your records
Historical information is available for all properties (only one property at a time, unfortunately), following these steps: View a record's property history

Do you know if there are any third-party tools that have recently come out that can help us accommodate this? The manual export is not working for us and creating a ton of manual work.
I have never come across any alternatives @clyoder616 - we still perform manual exports…
