When the Deal Stage is at particular stage, I would need to set the Forecast Category and Deal Probability automatically. Is it possible?

Yes, this can be done using the ‘Edit record’ workflow action in a deal-based workflow, after enrolling based on the deal stage (not pictured).

Have you checked the workflow actions log? Understand your workflow details page
Are you aware that enrolling deals by create date means that you’re enrolling all deals?
Can you share a screenshot of the branch criteria? All deals might have gone to the none met branch.
