I am sending qualified contacts an email containing a website link to onboard as a new customer. How do I configure my contact view to filter for only those who’ve been sent the onboarding link?

This requires an additional step: building a contact list.
Navigate to Menu > Contacts > Lists, then create an active contact-based list and in the dropdown that shows “Contact (Current object)”, switch to “Activity”. Find “Email subject” in the list, add the subject line of the email you sent, then save the list. The list will populate with all contacts that have an email with this subject line logged.
Now go back to the contact index page (Menu > Contacts > Contacts), click “Advanced filters”, find list membership and select the list from the step above.
