How can I edit who is in the list without removing them from other lists?

This depends entirely on the list criteria of all lists involved. Could you be more specific and give an example? Screenshots will also help.
For example, a contact is in 3 different lists, when they should only be in
1. How do I remove them from 2 lists without deleting them from the other
list? Everytime I try, it just deletes the contact entirely even though I
am deleting it from the actual list.

I’ll answer this without having any context – still, this information should get you where you want to be.
Let’s assume the following:
List A: This is the one you want to remove the contact from.
List B: This is another list that references list A and via list A also pulls in the contact.
List C: This is another list that uses the same list filters as list A.
You would remove the contact from list A by following these steps: Add records to or remove records from a segment
Once you remove the contact from list A, you cannot prevent the contact from also being removed from list B and C. If they either reference the list (“Contact is member of list A”) or use the same criteria (“Contact property value is any of”), then the contact also disappearing from lists B and C is expected behavior.
If you still want the contact on lists B and C, you would have to follow the steps linked above to manually add them to lists B and C again.
