Trying to find a way to create a deal property where I can select any company in Hubspot where Type = Partner in a multiple checkbox dropdown, under Deal properties.
By doing this we can associate contributors to the sale, define integration and track eligibility for partner commissions.
Any way to do this?

This is currently not possible. Out of the box, properties can only have a pre-defined list of values, they cannot automatically pull in values from existing records. This is something that could only be approached via the HubSpot API and custom development.
As an alternative, you could look into the flexible associations BETA, see here: Create and use association labels In Professional and Enterprise this would also allow you to label associated companies.
