What you describe would best be done with playbooks in HubSpot.
You can not change the notes tab, and notes aren’t objects in HubSpot but activities.
Playbooks however are intended for discovery and qualifications and would either create a note, call or meeting record and in addition can update properties from playbooks. So using your dummy example, you would have the following properties at contact level and ask those questions in the playbook:
1. Favourite colour
2. Favourite drink
3. Favourite holiday destination
4. First pets name
5. City you live in
You also mention “use the golden squares further on down on the left hand panel.” - could you elaborate what you mean by that?
