I want to be able to create a Deal from a form where my sales reps can add the line items they want to include in the deal all from one simple form. The current process of creating a deal, then adding line items, then editing the line items individually is too many steps for the sales reps to do.
I know I can create a Deal from a Contact using a form but would like to do this as well with Line Items.

I cheked for you and for the moment this is not possible. I have found this similar idea already submitted: “Line Item Detail in Create Deal Form”.
I’d recommend supporting the Idea with an upvote and explaining your use case in the comments.
Our product team uses that forum to collect ideas on how we can improve the product for our customers.
Product pays particular attention to the top voted ideas & takes them into consideration along with other feedback channels as well as their own vision to understand what features will be most valuable.
I also wanted to invite a couple of subject matter experts to this conversation @ChrisoKlepke, @johnelmer and @louischausse, can you think of a workaround that could help @jamieroyce-mc for this, please?

@jamieroyce-mc you wan build this entirely custom if you are developer or have access to a developer or a budget to hire a HubSpot Solutions Partner (like us)
Or you can try to build a form with Typeform and make it do what you want with Zapier
