Does Hubspot not fill in a contact’s company field if it knows the associated company? Am I missing something or is there any easy way to do this?

The contact company property is a manual text property unrelated to the associated company, hence, it is never automatically populated.
The way to get around this is to either add associated to your contacts view or create a workflow, if you have access to them, to map the associated company name to the contact company property.
