Hi I’m aware you can customise the left and right side of the contacts panel with customised contact properties, but is it possible to add a new tab in the contact activity panel that can display these new properties in one place

I’m not aware of any ways to change this. HubSpot doesn’t have settings for additional tabs.
You can however create sections in the left sidebar for groups of properties in Professional and Enterprise portals: Customize records
