I had a handful of custom fields that I no longer used - so we archived them, and then deleted them. I put one in there that actually needed - is there a way to restore a deleted custom field?

If you archived and deleted it, no. You would have to recreate it from scratch.

As @karstenkoehler aforementioned if you have archived and deleted then technically you can’t restore the custom property. Atleast from you hubspot dashboard.
However in backed hubspot keeps the data for some time interval, you can reach support team and ask if they help in the retreval of the property you’re looking for.
Hope the property can be retreived.
If it didn’t work, you have to re-create the custom property(custom field).
