I create content for a B2B technology company. Our customers can take a long time to purchase (as long as two years).
I would like to be able to filter companies based on their employees having opened a certain amount of content (blogs, case studies, web pages, newsletters) within a certain timeframe.
For instance, if CompanyX has viewed three pieces of content in the past 30 days, I want that company to enter a list.
I can view this information on LeadFeeder, which is linked to Hubspot, but I’m unsure if/how I can harness that. I don’t see a way of marrying companies with their employee activity.

If the contacts are on an active list for meeting that criteria you could run an active company list to look for companies with associated contacts that have this particular list membership. This would allow you to see both the contacts generating the activity as well as companies with contacts that have the associated level of activity.
