We created a date picker field for on-site inspections. We would like to block the meeting calendar of the lead owner for the day picked. Is that possible?

This is not possible, unfortunately. The meeting tool only takes into account the availability on the calendar, not custom properties.
One option I see here would be Zapier. This would be a hacky solution but might work. The approach would be to collect all contacts with a value for the date property in a contact-based list and sync that list to Google Sheets, using Zapier. Once in the list, you would create calendar events from the new list entries. The time would then be blocked on the calendar and the meeting tool should reflect the availability. Not sure if it works but it’s woth a try.
Any other solution would involve custom development based on the HubSpot API.
