When I use the BCC on my outlook (no extensions running), it’s creating two copies of email in hubspot for that contact. I can’t see what I’m doing wrong. Any ideas?

Can you please provide some additional information? Is this happening for all emails? Do you see the bcc address included in the sent emails? You mentioned that you do not have the extension running, however you are using the BCC feature to log emails, correct?

I cannot see the bcc in the sent emails (after I send which is kind of the
point of that I thought).
I am mearly sending an email to a contact, and adding the bcc as instructed
for hubspot. I only send it once, and it shows twice in the activity
log/email on hubspot. I’ve tried a couple times and everytime, I get two
copies there.
What might be part of this issue, is my confusion on what is supposed to
happen. I received an email to my IMAP account today from someone new, and
it came in through hubspot as well and added the contact, and the email
automatically. But when I tested this with different emails it didn’t do
that. SO I assumed Hubspot will not add/process my emails unless I put them
in contacts or bcc them.
If it does process my incoming and outgoing mail, then maybe it’s adding it
twice because once for the bcc, and second because it’s processing them?
So does it process my sent and received emails from my IMAP email account
listed in settings/general/email ?
