What should be the workflow to append employee number and copy from company over to lead ?

You’ll want to make a Company based workflow like so:
You’ll want to make sure that enrollment is on as well to update all contacts at the company when they come in. I use both properties so that if the company is updated it’ll update all contacts as well as updating anytime a new contact is associated.
