Make a default value for email property as what has been put in the `identity` `email` value so that users are contacted by what ever email that they signed in as on our app. Also support it with a hidden field option as on.

If I understand you correctly, you’d like to automatically populate the email field in HubSpot with the value from a custom field, identity.
Should that be the case, then this can be achieved with a contact-based workflow, available in Professional subscriptions: Create workflows
You would enroll contacts when “Identity is known”, then use the “Copy property value” workflow action to copy the value from identity into email.
Without workflows, this is not possible. It’s not possible either to set a default value directly for the email field.
If I got your request wrong, please provide a bit more detail and share an example.
