I’m trying to add campaign tags to specific email content in order to build a report that shows which type of content resonates with our audiences.
Any help would be greatly appreciated.

Have you looked into campaigns? Create campaigns
You can only assign one at a time, however there are quite a few reports that pull in campaign information for performance comparison.
If that’s not an option, a clear naming convention for marketing emails can be a substitute for tags. In the custom report builder, you can pull in marketing emails as a report source. That means, for example, that if you include tags at the end of your marketing email names, you could filter a custom report by “Marketing email name contains any of [tags]”.
This would allow you to create custom email performance reports and filter by tags.
