I can see there are different filters for product in the deal section. Do you know the different between:

Deal Type

Deal Product

Product Interest

Here is the official definition for deal type:

Deal type: deal types allow you to categorize your deals. The default options created by HubSpot are New Business or Existing Business, but you can edit or add new deal types in your deal property settings.

'Deal product' and 'Product interest' seem to be custom properties in your portal – in other words, they were created by someone in your company or consulting your company. You can check who created the property under Settings > Properties > Select an object: Deal properties.

Without having any background, I would assume that 'Deal product' is meant to document which products are relevant for that deal (e.g. product a, product b, product c).

'Product interest' is ambiguously close and could refer to the interest voiced by the prospect – which might not necessarily match the best solution for them. This could again be product a, product b, product c. A prospect might say they want a, but the sales rep identifies that they c is a better fit (which they would store in 'Deal product').

Again, I don't have any context, this would be my best guess. I'd recommend investigating internally.

Here are some of the default deal properties in which I found deal type and this is the HubSpot default properties the use case is mentioned in this : https://knowledge.hubspot.com/properties/hubspots-default-deal-properties

Apart from this additional property you are able to see you can always check who created go the properties section and select object as deals properties and hover over to your properties example "Deal Product" and "Product Interest" if the properties are created by some another user it will show the user name as shown in the example screenshot below you can ask the user who has created those properties and you will get an answer to the difference of these properties which is usually created according to each business needs :
