How can you replace the Hubspot logo with your own logo in the notification emails?

The appearance of the default notification emails cannot be changed. In Professional subscriptions, using workflows, you can create custom notifications using fully customisable automated emails. In free or Starter plans this is unfortunately not possible.

Could you explain how to create these custom notifications? I am on a professional plan and my understanding was this isn't possible.
