You can change the appearance of the chat icon by following the information provided in this link (https://knowledge.hubspot.com/conversations/get-started-with-conversations).

You can set up your user profile so your avatar, name, and preferred meeting link display when visitors are chatting with you.

That is a good question. We are about to deploy the live chat on our website, and I'm struggling to find a way to change HubSpot's default chat icon with the SDK.
Unfortunately, setting up agents' profile avatars doesn't seem to do the job because it doesn't change the default live chat icon in the inactive state.
I wonder if we can find a workaround and if there are other style options besides width, height, and border.
