Is there a way to have HS automatically send an email 5 days after a proposal was delivered, if the job was not moved to sold?

Yes, this can be done with a deal-based workflow: https://knowledge.hubspot.com/workflows/create-workflows

Simply replace my "Contract sent" stage with your own stage – assuming that the following stage is the one corresponding to sold. You could also change the second enrollment filter to "Deal stage is none of Sold or empty".

yes, some of our clients use sequences to follow up after a proposal was sent.

This is better than a workflow, because once the client replies

the sequence stops sending any other email/message.
